A Quick Yet Fabulous Brunch Menu

I love entertaining, but my schedule does not always allow me to fix a fancy spread.

Here is my go-to brunch menu for an impromptu party that gets great reviews from my guests. It’s also a good base menu for a potluck gathering.

  • Sliced Apples (or other seasonal fruit) and yogurt
  • Trader Joe’s Spinach Pie
  • Chicken strips (grilled or fried)
  • Trader Joe’s Cinnamon Raisin bread
  • Punch

This simple menu takes about 15 minutes to prepare making it the perfect backdrop for girlfriend chatter, book clubs, laughs and quality time.

The spinach pie also works well when you need to take a dish to an event, :-) . Pop it in the oven for 45 minutes and you have a dish that everyone will love! Trust me, it goes over well every time.

So, tell me, what is your go-to dish for a last minute get-together?
